what's for dinner?

Creamy Enchiladas

1 small onion- chopped
2 cans cream of chicken
1 pint sour cream
1 can chopped green chili's

cooked chicken - 4 breasts (or I'll take the chicken off one of those precooked rotisserie chickens)

grated cheddar cheese

tortillas

Preheat oven to 350. Mix together first 4 ingredients in large pot. (I usually cook the onion a little to take out some of its sharpness). Heat until warm. Take out about 3/4 cup of mixture and set aside. Mix cooked chicken into remainder. Scoop into tortillas and add cheese as desired. wrap up and place in 9x13 pan. Put remaining mixture over the top of the enchiladas and sprinkle with cheese. Cover and bake for 30 minutes at 350.

Best part of this recipe is that my kids all eat it without complaining. That's nearly a miracle. :)

I invite all of you to share whats for dinner too! I could use some easy and yummy recipes! (pretty please with sugar on top!!! I'll be checking your blogs)
